Tomato & Smoked Garlic Relish
I am obsessed with relish. I use it to spice up just about anything: sandwiches, roast veggies, meat, warm salads - you name it! It adds such a complex flavour and brings a whole new element to foods. The flavours in this relish are so beautiful and rich thanks to the smoked garlic and tomatoes, and roasting the vegetables at the start really makes their flavours pop. Once you taste this relish you'll want to add it to everything!

Ingredients100 g caster sugar1 kg tomatoes halved1 red pepper in large chunks2 large onions halved30 g olive oil100 g sun blushed or sundried tomatoes in oil1 tbsp paprika powder½ tsp smoked paprika powder1 tsp ground coriander1 heaped tsp salt200 g red wine vinegar100 g soft brown sugar4 smoked garlic cloves1 tsp mustard seeds InstructionsPreheat the oven to the highest grill setting. Line a large baking tray with greaseproof paper and sprinkle with the caster sugar. Add the tomato halves to the baking tray facing cut side down. Add the pepper chunks skin side up. Roast for 10 minutes under the grill until you see black spots on the skin. Remove and set aside. Meanwhile, place onions in the mixing bowl. Chop 3 Sec / Speed 5.
