For those of you not in Australia and wondering what a lamington is. It’s like a little sponge cake, covered in a thin layer of chocolate icing {frosting} and then coated in coconut. They’re really yummy. My favourites come from a little local bakery and they cut them open and put jam and fresh cream inside. I’m craving one right now.
