Thermomix Coffee Cake
Two of my favourite things are coffee and cake – so it only made sense to combine them in this easy Thermomix Coffee Cake recipe!
One of my biggest vices (apart from chocolate!) is my slight addiction to coffee – so you can see why this Thermomix Coffee Cake is one of my favourite recipes! Not only does the cake contain coffee, but it’s also in the delicious icing on top.
This is the PERFECT cake recipe to make when you want to make something for visitors or take over to a friends place as a treat. You can also make this Coffee Cake in advance and freeze it un-iced for up to 5 weeks – that is if you can resist it for that long!!
Thermomix Coffee Cake
My Thermomix Coffee Cake recipe is the perfect dessert or afternoon tea treat!
125 grams butter
220 grams caster sugar
3 eggs
1 tsp vanilla extract
1 tbsp espresso coffee
115 grams plain flour
75 grams self raising flour
90 grams sour cream
2 tsp espresso (- for the icing)
150 grams icing sugar (- for the icing)
20 grams melted butter (- for the icing)
Preheat your oven to 160 degrees and line the base and sides of a 20cm round cake tin with baking paper
Place the butter and caster sugar into your Thermomix bowl and mix for 20 seconds on speed 4.
Place the coffee and vanilla extract into a small bowl and add 1 tablespoon of warm water and mix until the coffee granules have dissolved.
Add eggs, vanillia and coffee mixture, flours and sour cream and mix for 30 seconds on speed 5. Scrap...
