Potato waffles with Smoked Salmon
I love potato waffles. They are a healthy alternative to the classic hash brown and make a great breakfast, lunch or even dinner. You can be totally free in experimenting with the toppings and serve them either sweet with some apple sauce or cinnamon and sugar or savoury with smoked salmon and cream cheese. There are so many options. The best thing is, you use almost no oil so the house won’t smell too much when you are making them and they are a great snack the next day in your lunchbox. You could also make smaller mini waffles for the kids and put them in their lunchboxes.
To keep the waffles warm while making the rest I place them in my Thermi servebowls which are perfect for keeping food hot or cold for ages. You can preheat the bowls in the oven and then place each waffle in the bowls, sealing with the silicone lid to lock in the lovely flavours.
500 g Maris Piper potatoes peeled & quartered
1 onion quartered
2 large eggs
50 g porridge oats
75 g plain flour
1 tsp salt
20 g vegetable oil for frying
100 g smoked salmon
80 g cream cheese
80 g sour cream
15 g chives (chopped finely)
1 pinch sea salt
1 pinch black pepper
For the waffles, place the potatoes, onion, eggs, porridge oats, plain flour and salt in the mixing bowl. Chop 7 Sec. / Speed 5. Fill the mixture into a bowl and set aside.
