Oat Biscuits
Oat biscuits are a staple in our house. We always have some at home, especially if we feel like snacking and we just need something to keep our energy levels up. You can be super creative with oat biscuits and add in any kind of dried fruit you like. This is a very forgiving Thermomix recipe and you can add nuts or seeds however you like. You might have to increase the milk quantity slightly if you are adding seeds that soak up a lot of moisture but these work an absolute treat. Instead of wholemeal flour you can use gluten free plain flour or spelt flour to your liking.Â
I use my large silicone baking mat on a large oven tray so that I can quickly clean it all up after usage and I don?t have to waste any greaseproof paper. It is so easy to use these silicone baking mats and you don?t even need to grease them before placing your biscuits on the tray.Â
75 g butter
30 g honey
75 g wholemeal flour
1 tsp baking powder
75 g porridge oats
50 g caster sugar
30 g milk
50 g desiccated coconut
50 g raisins (or dried apricots, in small pieces)
Preheat the oven to 180C / 160C Fan / Gas Mark Line a large baking tray with a silicone baking mat or greaseproof paper and set aside.
Place the butter and honey in the mixing bowl. Melt 2 Min. / 60C / Speed 2.
Add the wholemeal flour, baking powder, porridge oats, caster sugar, milk, desiccated coconut and raisins and mix 10 Sec. / Reverse Speed 5. If you prefer the oat biscuits to bit a little finer, mix 1...
