Mango Ginger and Chilli Chutney from Thermomix Flavours of India Cookbook
This is a fantastic recipe book and chip. So far I have made a few things and everything is very tasty and simple. Considering I am not Indian. The flavours are very authentic and the spices are made up of single spices put together. It is on page 154. I did cook mine longer so the colour is darker than the picture in the book. It tastes really great. This is a different chutney than my other mango chutney. They both taste great!
Ingredients:
1 Tbsp Oil
2 Garlic cloves
10g fresh Ginger
1-2 Long Red chilli's ( I used Jalapenos)
2 tsp nigella seeds (I didn't have any)
1/4 tsp turmeric ( I used 10g root)
1 tsp coriander ( I used whole)
1/4 tsp ground cardamon
1/4 tsp cinnamon 700g fresh Mango
250g raw sugar ( I used brown)
120g vinegar ( I used apple cidre)
1 tsp salt
100g raisins
1. Place garlic, chilli's, turmeric, coriander, ginger, and blend speed 8 /8 sec.
2. Add oil, cinnamon and scrape down sides, 1 minute/Varoma/speed 2
3. Add mango, sugar, vinegar, salt and raiseins and cook 45 minutes/100C/speed 2 Placing simmering basket on top of mixing bowl instead of measuring cup.
4 Insert M/C and blend gradually 10 seconds /speed 4.
5. Transfer into sterilised jars and seal quickly.
Keeps in fridge for up to 6 months once opened.
I served them with a dish called Aloo Tikki. I will post that recipe soon. Also from the Flavours of India Cookbook.
