For those wondering about my Mum’s Famous Cucumber Salad on the back of SkinnyEntertaining This was a SURPRISE to me.

Sian approached my mama and asked her to write a testimonial for the back of the book and she sneakily added in my mum’s famous recipe as an easter egg! It is crazy simple, so I thought I would share it with everyone on the blog also as a free recipe.

This cucumber salad is dairy free, gluten free, paleo, low carb, egg free, super skinny and can easily be halved, doubled or tripled.
