Earl Grey Tea Fruit Bread Loaf
Afternoon tea is something very special in my opinion. There are certain things that cannot be missed when you are preparing an afternoon tea for friends or family or just want a lovely cup of tea and enjoy by yourself. A fruit loaf is one of them and this super easy and tasty Thermomix recipe is very quick to prepare and will just taste so incredible. I used a combination of dried fruit that I really like but you can experiment with your own favourites. Cranberries or dried cherries would go really well too but you can also just use up what you have at home.
To make the loaf I used my adjustable loaf tin on the smallest setting. It produced a wonderful loaf with the right height and baked to golden perfection.
2 Earl Grey Teabags 300 g boiling water
150 g raisins (or sultanas)
1 orange (zest)
100 g dried apricots
60 g muscovado sugar
275 g plain flour
1 level Tbsp baking powder
1 tsp mixed spice
1 pinch salt
2 large eggs
75 g apricot jam
Preheat the oven to 180C / 160C Fan / Gas Mark 4. Grease an adjustable loaf tin on the smallest setting or a 2lb loaf tin with butter or line with greaseproof paper and set aside.
Pour the boiling water in a jug and place the teabags inside. Leave to infuse for 3 minutes, then remove the teabags and add the raisins.
Meanwhile, place the orange zest in the mixing bowl. Chop 5 Sec. / Speed 10. Add the dried apricots and chop 3 Sec. / Speed 7.
