Chocolate Guinness Cake
I still cannot get over how fluffy this chocolate Guinness cake is. Perfect for St. Patrick’s day this is the best cake to celebrate with the whole family. If you have kids in the house and are worried about the alcohol you can easily use Coca Cola instead to get a similar flavour. This is one of those Thermomix recipes that you can prepare in no time and the wonderful malty aromas are so amazing you will want to go back for more. The Guinness enriches the chocolate flavour and creates a moist and fluffy cake with a simple and easy cream cheese frosting.
I use my 20cm push pan cake tin and reusable cake liners to make this cake and minimise washing up afterwards.
Cake Batter
125 g unsalted butter (in small chunks) 110 g Guinness (or Coca-Cola)
40 g cocoa powder
200 g light soft brown sugar (or coconut sugar)
100 g whole milk
2 large eggs
180 g plain flour
1 level tsp bicarbonate of soda
Cream Cheese Frosting
100 g unsalted butter (in small chunks)
200 g icing sugar
100 g cream cheese
1/2 tsp vanilla bean paste
50 g dark chocolate shavings
Preheat the oven to 180C / 160C Fan / Gas Mark 4. Line a 20cm round cake tin with a reusable cake liner or greaseproof paper. Set aside.
Place the butter in the mixing bowl. Combine 20 Sec. / Speed 5.
