Chocolate Chip Steamed Muffins
Whenever I am craving something I instantly think of chocolate chip something. That’s why these epic chocolate chip steamed muffins are just perfect. If you are like me, or just want to please the kids, these are your answer. Steaming them makes it so much more fluffy and tasty and I usually eat them while still warm because the chocolate is all gooey. You can use my awesome silicone muffin moulds for steaming.
One important tip when steaming muffins: always cover the muffin mould with some cling film that is heat resistant or use my Varoma Teflon paper so that you ensure no steam enters the muffins. That way they stay fluffy and don’t soak up excess moisture.
50 g unsalted butter (in small chunks ) 300 g plain flour
2 tsp baking powder
80 g caster sugar
225 g whole milk
2 large eggs
1 tsp vanilla extract ((or vanilla bean paste))
200 g milk or dark chocolate chips
1000 g water
Grease 2x 7-hole silicone muffin moulds with butter and dust with flour. Set aside.
Place the butter in the mixing bowl. Combine 10 Sec. / Speed 5. Scrape down using a spatula. Add the flour, baking powder, caster sugar, whole milk, eggs and vanilla extract and combine 30 Sec. / Speed 5.
Add the chocolate chips, reserving a handful for sprinkling and combine 20 Sec. / Reverse Speed 2.
