This is my new favourite addition to my every growing list of rocky road recipes. Not that I’m obsessed or anything. Truth be told, I’ve been wanting to have a crack at some Rocky Road ever since I shared my Really Raspberry Rocky Road recipe on my Facebook page asking everyone’s favourite Rocky Road ingredient and Leah mentioned Rice Bubbles. Thanks Leah, it’s a genius addition! 
I’m a bit of a survivalist/tight ass when it comes to my favourite chocolate bars and when they are on special, I stock up as if an apocalypse is coming. Obviously I shouldn’t joke about the apocalypse because after this year’s bush fires and the current pandemic,  it’s been just like living in an apocalypse. When it comes to sad or bad news, I tend to wear my emotional raincoat, stick my head in the sand and then bake or in this case, make my feelings. So with my heavy heart, I turned to my apocalyptic stash of chocolate, got myself some rice bubbles, upcycled some left over fudge and away I went. Of course, after I made my feelings, I ate them and I must warn you that this rocky road is totally irresistible!
