Apple Crumble Cake
This recipe combines two of my loves: apple crumble pie, and cake! I just love using apple in cakes – it creates such a great texture, plus I can kid myself that I might actually be eating a health food… (well it's fruit, right") This cake is beautiful and light, and the crumble on top is a lovely addition to an already amazing cake!
For the cake
2 Bramley apples
½ lemon (juice)
125 g butter
140 g sugar
3 eggs
225 g plain flour
2 tsp baking powder
½ tsp salt
75 g milk
For the crumble
50 g sugar
100 g butter
150 g plain flour
½ tsp ground cinnamon
Preheat the oven to 180°C. Line a 20cm square cake tin with greaseproof paper and set aside.
Peel, core and slice the apples, drizzle over the lemon juice and set aside.
Add the butter to the mixing bowl. Combine 20 Sec. / Speed 5. Add the sugar, eggs, flour, baking powder, salt and milk and combine 30 Sec. / Speed 5.
Pour the mixture into the prepared tin, garnish with the apple slices.
Clean the mixing bowl.
To make the crumble, place the sugar, butter, plain flour and ground cinnamon in the mixing bowl. Combine 20 Sec. / Speed 6. Crumble over the apples and bake for 35-45 minutes until brown and fully baked. Remove and transfer onto a wire cooling rack. Leave to cool before serving.
