- 400 g cooked octopus, sliced
For the potato emulsion with octopus:
- 1,500 g water
- 2 bay leaves
- Salt to taste
- 500 g potatoes, peeled and cut into chunks
- 200 g heavy cream
- 30 g extra virgin olive oil
- Ground pepper to taste
For the paprika oil:
- 80 g extra virgin olive oil
- 1 tablespoon sweet paprika
- ½ tablespoon hot paprika (optional)
- Salt to taste
Preparation of Octopus and Potato Foam with Thermomix:
To begin preparing this tempting recipe, you should first cook the octopus in your preferred method, either in water or on the grill – either way, it will turn out great. Once the octopus is cooked, cut it into thin slices and set aside until the dish is assembled.
Next, add the water and bay leaves to the Thermomix bowl and set the machine to: 12 minutes / 100°C / Speed 1. While the water boils, wash, peel, and cut the potatoes into small pieces. Set them aside until the Thermomix time is up.
