Burgers of quinoa with Thermomix

Ingredients
150 grams of quinoa
800 grams of water
1 shallot
100 grams of vegetables (of your choice, including olives), both cooked and raw
20 grams of extra virgin olive oil
1 medium egg
80 grams of grated Parmesan cheese
50 grams of breadcrumbs
1 pinch of salt
Instructions
Quinoa Preparation: Start by washing and draining the quinoa. Then, place it in the mixing bowl along with the water and cook for 15 minutes at 100 degrees, speed 1 counterclockwise. Once cooked, drain and cool the quinoa under cold running water.
Vegetable Preparation: In the Thermomix mixing bowl, add the shallot and the chosen vegetables, and chop for 4 seconds at speed 7. Then, gather them at the bottom with the spatula and sauté for 5 minutes at 120 degrees, speed 1.
Ingredient Mixing: Add the cooked quinoa, egg, grated Parmesan cheese, breadcrumbs, and a pinch of salt to the mixing bowl. Mix for 10 seconds at speed 4 counterclockwise.
Hamburger Formation: Transfer the mixture to a bowl and, with lightly greased hands, shape the burgers. Coat them with a mixture of breadcrumbs and Parmesan cheese, then place them in the freezer for 30 minutes to firm up a bit.
Hamburger Cooking: Spray a bit of oil on a hot griddle or pan and cook the burgers for about 5 minutes on each side, until they are golden and crispy on the outside.
