This decadent Thermomix Earl Grey Lavender cake has a gorgeous combination of lavender and fresh Earl grey tea to create a well-rounded flavour of freshness in your mouth. Trust me, you will go back for seconds. Its gorgeous looks are too irresistible and the preparation for the cake requires minimal effort.
If you don’t like Earl Grey tea, you can easily use another black loose tea instead. Imagine Assam tea or darjeeling. What wonderful combinations.

Ingredients
Thermomix Earl Grey Lavender Cake:
30g boiling water
1 Tbsp Earl Grey loose tea leaves
20g whole milk
4 eggs
200g butter
200g caster sugar
1 pinch salt
300g plain flour
1/2 tsp vanilla extract
1 Tbsp baking powder
Lavender buttercream:
250g unsalted butter
480g icing sugar
20g cocoa powder
splash of reserved Earl grey infusion
1 tsp lavender buds
Method
Pour boiling water over the Earl Grey loose tea leaves and leave to infuse for 10 minutes. Then remove the leaves and leave to cool. Add the milk and place aside.
Preheat the oven to 180°C.
