Oh glorious sticky date puddings. Possibly one of the best Thermomix recipes I could imagine. I absolutely adore this dessert, they are so incredibly juicy and tasty, there is a guaranteed risk for addiction. Jesse and I made them using my awesome silicone dariole moulds and couldn't believe just how nice they turned out. Make sure to grease your silicone dariole moulds before you pour the mixture in so that it is easier to release them later on. Steamed in the Varoma these puddings make a fantastic dessert.
Caramel sauce
150 g soft brown sugar
100 g unsalted butter (plus extra for greasing)
250 g double cream (or thicknened cream)
1 Tbsp bourbon (optional)
1 tsp vanilla bean paste
1 tsp salt
Sticky Date Puddings
200 g dates (stones removed + extra to decorate)
250 g boiling water
1 tsp bicarbonate of soda
60 g soft brown sugar
60 g unsalted butter (in small chunks)
150 g plain flour
2 tsp baking powder
2 large eggs
1 tsp vanilla bean paste
To make the caramel sauce, place the brown sugar, butter, cream, bourbon, vanilla bean paste and salt in the mixing bowl then cook 7 Min. / 80°C / Speed 3. Transfer to a warmed Thermi Servebowl and set aside while you make the puddings.
Place the dates, boiling water and bicarbonate of soda in the mixing bowl and allow to stand for 5 minutes. Add the sugar and butter then chop 10 Sec. / Speed 6. Scrape down sides of mixing bowl with spatula.
