Smoked Salmon Pizza
Makes 2 large pizzas (easily halved)
This pizza was a happy and most delicious accident. It was raining kangaroos and koalas outside and the idea of getting soaked on a trip to the supermarket really did not appeal. So instead we did the sensible thing, put our PJs on, binged on Netflix and emptied the fridge.
We had some hot smoked salmon that needed using, some sad looking spinach and we always have a selection of cheese so a pizza with our favourite 2 ingredient pizza base seemed the obvious choice. I always have a stash of homemade pasta sauce in the freezer, but if you don’t, tomato paste will work wonders as a base too. What started off as a pot luck dinner turned out to be one of our all time favourite pizzas. Isn’t it funny how life turns out"
