Fluffy American Pancakes
One thing I really like to make on a weekend is pancakes. These Thermomix fluffy American Pancakes have to be colourful in my house so I usually top them with fresh seasonal fruit and honey. I really cannot start a weekend without them. They are so fluffy and light and fill you up for a long time. Though I occasionally had pancakes in Germany, I preferred them the American way. They are the real deal. If you are tight for time, prepare them ahead and heat them as you need them, they last well in the fridge for up to 3 days.
25 g unsalted butter
200 g plain flour
2 tsp baking powder
1/2 tsp bicarbonate of soda
200 g whole milk
10 g caster sugar
3 large eggs
To serve
Bacon
Raspberries
Bananas (chopped or sliced) Honey or maple syrup
Place the butter in a large frying pan and melt until completely dissolved. Take out of the pan and pour into the mixing bowl. Use a paper towel to distribute the remaining butter in the pan.
Add the flour, baking powder, bicarbonate of soda, milk, caster sugar and eggs. Combine 45 Sec. / Speed 4. Leave the batter for 10 minutes to bubble.
Heat up your large frying pan again and place a ladle of batter inside. It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm thick.
Cook until batter is used up and decorate with honey, bacon and fruit. Enjoy!
