Easter Egg Cookies
Easter time is a wonderful time to indulge on sweets and bake lots. I love my cookies and this Easter egg cookie recipe is actually one of those super quick and easy Thermomix recipes that you can whip up in less than five minutes with the family. You can use up leftover mini chocolate eggs and just go creative on the extra toppings. I could even imagine sugar sprinkles to go really well and add some extra colour to the cookies.
If you would rather make these traditional, then you can also add in 300g chocolate chips instead of the mini eggs and you have yourself a wonderful chocolate chip cookie.
150 g unsalted butter (in small chunks)
130 g light soft brown sugar
100 g caster sugar (or coconut sugar) 2 tsp vanilla bean paste
1 large egg
1 egg yolk
300 g plain flour
1/2 tsp bicarbonate of soda
300 g Cadburys mini eggs (or chocolate chips)
Preheat the oven to 170C / 150C Fan / Gas Mark 3. Line two baking trays with greaseproof paper and set aside.
Place the butter in the mixing bowl. Combine 20 Sec. / Speed 5. Add the brown sugar, caster sugar, vanilla bean paste, egg, egg yolk, flour and bicarbonate of soda. Combine 15 Sec. / Speed 6.
Add the mini eggs and combine 10 Sec. / Reverse Speed 4. Mix in the eggs with your spatula a little more if they are not fully incorporated. Use a tablespoon to place round balls the size of the tablespoon on your prepared tray making sure there is at least a 4cm gap in betw...
