Chorizo Breakfast Muffins
Breakfast is the most important meal of the day for anyone. I love how fast I can whip up a batch of these tasty chorizo breakfast muffins. They are the perfect Thermomix breakfast recipe and you can easily steam them or bake them. I find steamed they keep a bit fresher for longer whereas baked they get that lovely, smokey flavour.
I use my awesome silicone muffin moulds but you could also use a traditional muffin tin if you are baking them. Instead of chorizo you can also use cubed bacon or pieces of smoked mackerel for a meatless version. To make it a veggie only bake, add some tomato pieces instead. They make the perfect lunchbox treat for the kids.
20 g butter (for greasing)
75 g mature cheddar (in small chunks) 1 courgette (in 4cm chunks)
4 spring onions (in small chunks)
120 g chorizo sausage (in 3cm chunks)
10 large eggs
1 pinch sea salt
1/2 tsp black pepper
1000 g water
Grease 2x 7-hole silicone muffin moulds with butter and set aside.
If you want to bake these muffins instead of steaming them, preheat the oven to 220C.
Place the cheddar in the mixing bowl. Chop 5 Sec. / Speed 9. Transfer into a small bowl. Set aside.
Add the courgette to the mixing bowl. Chop 2 Sec. / Speed 5. Transfer into the bowl with the cheddar and set aside.
Place the spring onions in the mixing bowl. Chop 3 Sec. / Speed 5. Transfer into the bowl with the chopped veggies and set aside.
