Brazilian Cheese Puffs with Chorizo
This has got to be one of the tastiest snacks you can prepare and such an easy Thermomix recipe. I make Brazilian cheese puffs all the time and find new variations to make them more exciting and interesting wherever I can. This one is particularly tasty because it involves chorizo crumble and a piece of chorizo in the center. You could easily leave out the chorizo in the middle and just do the crumble but I think it adds an extra kick.
150 g chorizo sausage
100 g Mature cheddar (in small chunks )
150 g whole milk
50 g vegetable oil
1 large egg
170 g arrowroot flour (or tapioca flour)
1 tsp sea salt
20 g chives (chopped)
Preheat the oven to 220C / 200C Fan / Gas Mark 7. Grease a small 24-hole muffin tin and set aside.
Place 100g chorizo in the mixing bowl and chop 5 Sec. / Speed 7. Heat a non-stick frying pan with a little oil and fry the crumbled chorizo until browned. Transfer into a small bowl and set aside.
Cut the remaining chorizo into 24 slices. Set aside.
Place the cheese in the mixing bowl. Chop 10 Sec. / Speed 9. Remove about 2 Tbsp for sprinkling. Set aside Add the milk, vegetable oil, egg, arrowroot (or tapioca) flour, salt and chives and 1/2 of the fried chorizo. Blitz 25 Sec. / Speed 8.
Fill each muffin hole 3/4 with the batter and drop 1 slice of chorizo in each hole. Sprinkle with the reserved grated cheese. Bake for 10-15 minutes until puffed up and golden. Remove...
