Banana Pikelets with Caramel Sauce
When I made these I had a huge fail at first. I thought I would make jam filled pikelets. Little did I know that nothing was going to work out. And I am so glad it didn’t because I took a moment and thought what else I could do with this lovely pancake mixture. So I sliced up a banana and fried each slice first, topping it with some Pikelets mixture, making banana pikelets. But something was missing. Of course, it had to be caramel sauce. It was a breakfast that Jesse will remember forever. I don’t think I have seen him ever eating so fast. This is truly an amazing Thermomix recipe that the whole family will love.
You can make the caramel sauce ahead and keep it refrigerated for up to 1 week. I make really good use of my incredible Thermi Servebowls when whipping these up. I use one bowl to keep the caramel sauce warm and another bowl to keep the pikelets warm while frying the rest. Perfect breakfast at the right temperature.
185 g milk
200 g plain flour
1 large egg
20 g caster sugar
2 tsp baking powder
20 g unsalted butter (in small chunks )
2 bananas
Caramel Sauce
125 g unsalted butter (in small chunks)
250 g brown sugar
125 g double cream ((or thickened cream))
For serving
1 banana
50 g Greek style yoghurt
To make the Pikelets, place the milk, plain flour, egg, caster sugar, and baking powder in the mixing bowl. Combine 20 Sec. / Speed 4. Scrape down using a spatula.
