Prawn and Chorizo Paella with Chef Dean Edwards

Ingredients
15 g fresh parsley, leaves only
120 g onions, quartered
300 g red peppers, seeds and stalk removed, cut in pieces
20 g olive oil
200 g chorizo, peeled, cut in pieces (0.5 cm)
300 g paella rice
800 g chicken stock
1 pinch saffron
250 g peeled, raw prawns
½ tsp fine sea salt
2 pinches ground black pepper
25 g lemon juice
1 lemon, cut into slices for garnish
Preparation
1. Place parsley in mixing bowl and chop 5 sec/speed 5. Transfer to a small bowl and set aside.
2. Place onions, peppers and oil in mixing bowl then chop 5 sec/speed 5.
Sauté 3 min/120°C/speed 1.
3. Add chorizo and cook again 5 min/100°C/?/speed 1.
4. Add rice, stock and saffron then cook 20 min/100°C/?/speed ? until rice
is tender and stock absorbed.
5. Add prawns, salt and pepper stir in with spatula then cook
4 min/100°C/Reverse/speed Spoon.
6. Add lemon juice and reserved parsley, stir through with spatula then serve
with lemon slices.
