Cream Cheese Pancakes - Tenina Holder, Cooking with Tenina

Here's Tenina from Cooking with Tenina making her scrumptious cream cheese pancakes, perfect for Sunday brekkie in bed. Delish!
INGREDIENTS
125g cream cheese
3 eggs
15g psyllium husks
Pinch pink salt flakes
1 tsp ground cinnamon
1 tsp low carb sweetener
Water, as needed (optional if batter becomes too thick)
Coconut oil for frying
METHOD
1. Place all ingredients except coconut oil into TM bowl and blend 20 sec/speed 8.
2. Scrape down sides of bowl and allow mixture to stand for at least 10 minutes.
3. Preheat a frypan on a medium heat.
4. If the mixture has become too thick add a little water and blend 6 sec/speed 6. Note that this batter will be thicker than the traditional pourable consistency of regular pancakes. 5. Using a tsp of oil per pancake, spread ½ cup mixture into a round shape and cook both sides.
6. Serve with berries and cream of choice.
7. Sprinkle with a little additional ground cinnamon if desired.
