Portuguese cream cake with Thermomix
Imagine: Layers of butter-soaked Maria cookies, a sweet and delicate cream, and a hint of cinnamon that transports us directly to the sunny streets of Lisbon. This tart is like a warm hug in the form of a dessert.
In my kitchen, the Thermomix is my faithful companion, and with it, preparing this tart is a breeze. So, without further ado, let's dive into this recipe that will make your taste buds dance with joy. Are you ready? Let's go!
Ingredients:
500 grams heavy cream
310 grams Maria cookies
8 sheets gelatin
87 grams butter
282 grams condensed milk
Cinnamon powder
250 grams milk
Preparation:
Place the cookies in the mixing bowl and chop at progressive
speed 5-10 / 20 seconds.
Remove four tablespoons of the cookies and set aside. Leave the rest in the mixing bowl.
Add the butter and mix at
speed 2 ½ / 50°C / 2 minutes.
Transfer the contents of the mixing bowl to a tart mold, spread evenly, and store in the refrigerator.
Soak the gelatin sheets in water and hydrate according to the instructions on the package. Then set aside.
Add both types of milk and the cream to the mixing bowl. Mix at
progressive speed 5-7 / 30 seconds.
Then, let the Thermomix run at
speed 3 / 90°C / 12 minutes.
Mix again at speed 3 / 1 minute and 30 seconds. Add the squeezed gelatin through the opening in the lid.
