Apple yeast braid with Thermomix
Hello colleagues. Today I bring you a new recipe. A filled apple braid, super delicious. I highly recommend it and it is very easy to prepare.
INGREDIENTS: DOUGH:
- 500 g strong flour
- 14 g fresh yeast
- 200 ml milk
- 60 g sugar
- 40 g honey
- 80 ml sunflower oil
- 1 egg
- Zest of 1 lemon
- Pinch of salt
FILLING:
- 3 apples
- 100 g sugar
- Juice of half a lemon
- 30 g butter
- Ground cinnamon (optional)
PREPARATION: DOUGH:
- Sift flour, 20 seconds / Speed 8. Set aside and reserve.
- Heat milk and add the crumbled yeast and a tablespoon of sugar, stir and let rest for 15 minutes.
- In the mixing bowl, add the egg, remaining sugar, honey, lemon zest, oil, and the milk with yeast, 5 seconds / Speed 4, then add the reserved flour and salt, 10 seconds / Speed 4. Let rest for 20 minutes to hydrate the flour particles.
- Then perform 3 kneading cycles of 2 minutes / Kneading level, with a 5-minute break between each cycle. Transfer to a lightly greased bowl and cover. Let the dough rise (about 2 hours and 30 minutes, depending on room temperature). After this time, degas the dough (remove the air after rising) by kneading it by hand for a minute.
